I’ve realized that when Du isn’t home, I don’t need to plan for a dinner each night. There is usually more than enough for two servings of leftovers so I usually get a lunch and another dinner out of the deal. So here’s this week’s menu of dinners:
- Eat the Rainbow Black Bean Soup
- Spiced Tempeh and Cauliflower Pilaf
- Roasted Barley, Corn, and Raddichio Salad with Balsamic Reduction
- Black Bean and Butternut Squash Burritos
I’m also planning on making some awesome fall deserts this weekend:
