Vegan Cookie Cake

I can’t say I ever really wanted a giant cookie cake over the real deal at any point in my life. But making a cake from scratch requires a little more effort and time than I actually have.    Chocolate Covered Katie whipped this thing up and I really wanted to try it.  Unfortunately I got my opportunity for a going-away party at work.  I thought I’d make my wonderful co-worker this giant cookie cake to show her how much I will miss her (even though she was just moving to a different building).

My cookie cake was clearly more amorphous than Chocolate Covered Katie’s (I wonder if she had a trick to get hers so perfectly round).    But what I lacked in form I made up for with frosty pizzaz.  I’m quite proud of that icing penmanship.


  • 1/2 cup quick oats
  • 2 T unsweetened applesauce
  • 1 can white beans or garbanzos (drained and rinsed) (250g)
  • 1.5 T canola oil
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cups brown sugar (You can try adding less, if you’re used to healthy desserts. Also, white sugar will work if you don’t have brown, but brown is recommended for the best taste.)
  • 1/2 cup chocolate chips (I actually used cocao nibs – it had a mint chocolate chip consistency.  oops! made it even more healthy!)

Blend everything (except the chips) very well in a food processor. Mix in chips, and pour into an oiled pan. Cook at 350 F for around 20 minutes. Let stand at least 10 minutes before removing from the pan.

Shirt Re-Edit

I stumbled across this little number a while ago and I loved it.  Leaves + scarf + apparent fuzzy felt!

I’m sure it was expensive so the cheapsake in me thought I could reproduce or maybe create something inspired by it.   This is what I came up with:

I took a bunch of old corduroy pants (green, blue, brown, and tan) and cut some leaves out.  Then I pinned them around the neckline and then sewed them in place.  In order to fight potential fraying, I used fray-stay where the corduroy was cut.  Unfortunately it only resulted in one wear.   The corduroy on my neck was more scratchy than I anticipated.  Neckline also got a little wonky, making the shirt awkward to really wear.  Fail.

All is not lost though!  I think I can maybe salvage my materials and do a riff of of this cute little top.

I think the shirt I used lends itself more to this design than the other.  Just no more scratchy neckline corduroy please.

And if I ever get around to actually getting some felt,  I still might try to make that scarf…

  • Date night with Du tonight at Bombay Nights. nom nom nom Indian food


  • 9 mile run at Loch Raven – in 53 degree weather!!  I’m so excited to not be running in 100% humidity!!  I like sweating, but not dripping.
  • Serious post-run nap time
  • Working on, not one, but TWO presentations for my grad classes this week.  Ugh.  Can I have my master’s now please?
  • Polish party in Bethesda at the sis du’s place.  We were charged with bringing the Polish libations.  Du found Tyskie (tisk-yeah) which is apparenlty pretty big in Buffalo.


  • Actually sleeping in (glorious glorious!)
  • Some cooking – I’m thinking I need to get my pumpkin baking engine in gear.  It’s October tomorrow!
  • Watching some FOOZBALL while I knit.  All while wearing sweatpants. I know how to multi-task.

Apparently no one could comment on my google blog – which makes writing a blog feel quite worthless – so I decided to move myself over to wordpress.

So hello wordpress!  I sure hope you don’t suck as much as google did!
